This Mexican restaurant wants to turn a Long Beach intersection into a delicious corner

With recipes that pay homage to his family roots in San Luis Potosí in Central Mexico, this Long Beach native wants to turn a Wrigley neighborhood intersection into a hot spot for fans of Mexican food.
A September opening is expected for La Esquinita (the little corner) Mexican Grill, the first restaurant by experienced chef and Long Beach native Erik Vasquez.
“It’s just authentic good quality homestyle cooking,” said Vasquez, who will be using traditional recipes from p
