Taco Tuesday: Pork al pastor at home for days

Taquierio Taco Patio in Irvine maintains one of the most impressive trompos in Orange County. The trompo is that vertical rotisserie that resembles a giant, spinning top. The spit is stacked with layers and layers of marinated pork al pastor, which caramelize and char as the trompo slowly spins. (They have one loaded with chicken, too.) 
I’ve always wanted to raid their kitchen and abscond with that entire trompo. Sadly, I’m not daring enough to do that.
