SideDoor gastropub in Corona del Mar has a full-time cheese monger

Many fine dining restaurants employ a sommelier but who would hire a full-time cheese monger? SideDoor in Corona del Mar where one-third of the menu comes out on a board.
Enter Tracy Nelsen, the restaurant’s official big cheese.
“I started at SideDoor eight years ago,” says Nelsen, a resident of Westminster. She took to the cheese program about 6 years ago and has been in charge ever since.
