Ryan Sumner cooks up new plans for Newport Beach dining

On March 11, chef Ryan Sumner of Lighthouse Bayview Cafe will unveil a new dish. He’s decided to pickle ramps, which are only available for a few weeks in spring, to dot a plate of handmade agnolotti pastas decorated with fresh pea leaves. Surprisingly the chef has no plans to serve this plate at his restaurant. Instead, the lucky attendees at this year’s Table for Ten fundraising gala, will taste Sumner’s creation.
The 27-year-old chef, focuses on serving comfort food. A gril
