Master Gardener: How to prune a peach tree to keep it productive and manageable

Q: I have a young peach tree that I want to keep small enough to harvest without the use of big ladders. In winter, can I prune off more than the maximum 25-30 percent that my garden book recommends?
A: Many years ago, I had a professor at Cal Poly who told us that a piece of fruit we can’t reach is a piece of fruit we don’t have. Keeping your fruit trees small enough to harvest its fruit easily is just as important today as it was then.
