A new high-end restaurant and bar is hoping to entice young professionals with its vast selection of champagne, cocktails, craft ales and fine wines.The Bear and Lace, which will open in Maid Marian Way next week, spans across two floors and will serve up hundreds of hand-selected beverages alongside food such as lobster and cheese.Owner Eddie Rathour – who also runs 13 bars including Fat Cats in Sherwood, Nottingham and Derby and The Blue Bell in the Cornerhouse – said he bought the
