Wine Guy: Extend the wine course
First, an admission. I completely appreciate why most of our wining is one-dimensional. Under normal dining occasions, opening one bottle of wine makes sense. Heck, the majority of times getting a glass in with a one-pot, mid-week meal can be considered a win!
