Danielle Smith cites research from UC Davis’s John Muir Institute. She doesn’t mention the institute’s research on the relationship between climate and diet. Benjamin Houlton and Maya Almaraz have demonstrated that while a single serving of beef produces 330 grams of carbon dioxide, a serving of lentils emits only two grams — a huge difference.
