Well, there goes my hunch that Italians would be the last to succumb to gluten intolerance.
Enrico Fratoni, chef at the newish Soppa Sotto Pizzeria is Italian; he loves pizza and he loves pasta and bread. But as he puts it, “I’ve got a gluten problem. I notice, if I overdo it, I get eczema but I’m still eating small quantities of pizza and pasta. It’s so sad.&
