Peruvian road trip: Cacao’s team learns about Latin American food right from the source

Some restaurateurs might take their staff on a field trip to a local market or nearby farm. Not Jefferson Alvarez. When he decided his team needed to learn more about the Latin American origins of the food they serve at Kitsilano’s Cacao restaurant, he took them all the way to Lima, Peru.
“I wanted to show them what it was all about. I wanted to go deep into our roots,” says Alvarez. “If you’re going to learn to cook something, you have to know the best.”
