Doug Stephen started his career in the front of house at fine dining establishments in Vancouver and Toronto, he eventually found a passion for cooking and slid into the kitchen at Merchant’s. That’s where his famous hot chicken was born, first as a special and then as a secret off-menu item for industry insiders, who kept it on the DL. Today it is served to all at his Downlow Chicken Shack.
